My I-Touch has 4.2.1 software and I want to upgrade to iOS 5 but when I enter I-Tunes it says my software is the most current. How then do I upgrade?

You may have a 2nd generation iPod touch which can only go as high as iOS 4.2.1. Check this page http://support.apple.com/kb/HT1353#iPod_touch_2nd_generation to confirm which model you have. If it is 2nd gen, then you cannot upgrade to iOS 5.
