reinstalling OS X mini server on dual hard drive system

I am trying to reset a Mac Mini Server v.10.6.8 so that I can sell it. All these handy cloud services has made it unnecessary for our environment.

Here's my dilemna --- how do I reset it? It's a dual hard drive server so it's got no optical drive for the DVD. I currently only have access to my Win7 desktop (which has a dvd drive) or a series of MacAirs (no optical drives). So I can remote into my server via screen sharing from the MacAirs or I can hook it up directly to a monitor.

In theory, I could share the Win7 drive but I've never had much luck with that crossover. The Win7 drive doesn't even recognize the disk when I insert it.

I really just want to run the reinstall the OS and wipe the drives. Any ideas?
