Your screenshot only shows one tab stop. I have a feeling you're expected the physical tab stops every half inch like Microsoft does & have pressed Tab multiple times to put the second text where you want it. Pages does have the default tabs every half inch but they are invisible & are over-ridden to the left of any physical tabs you set. You have to set the tab stop where you want the "dots" to end. You'll notice that the only tab stop you have is at 1 inch.

There are several ways to make a change. First, click & drag the existing tab stop to where you want the second text to start. Or you can change the number in the inspector by double-clicking it & typing in a new number.

Personally, I always found that very frustrating to have to remove the tabs one by one when I had to use Word.

The Tab is a mark on the Ruler, click and hold down the mouse key and drag it sideways to where you want it.

It will normally go to fixed units but if you hold down the command key while you drag, it will go wherever you drag it to.

To make the tab a Leader Tab:

Inspector > Text > Tabs > Tab Stops: select your tab from the list > Leader > select type

Styles are the attributes of the text, its font, size, margins, color, language, spacing, tabs etc

You can tediously do these over and over again or name them and save them. eg Head 1 or Text…Leader

Then to apply it anywhere you just select the text you want to be that style and click on the name in the Styles Drawer.

None of this is new or novel, other than Pages' rather nice method of using example text and making that a style in one stroke and showing what it looks like in the Styles Drawer.
