What IPad software can I use to replace Microsoft office (i.e print, word, excel etc.)?

There are a number of options that support those document types, including Apple's Pages (word), Numbers (excel) and Keynote (powerpoint) apps, and from third-parties two of the most popular apps are QuickOffice HD Pro and Documents To Go Pro (both of which support word, excel and powerpoint documents in the one app). Have a look at their features and reviews in the store and see if any of them do what you need.
