Before I recycle my iPhone 16GB 3GS how can I remove all music please

My new iPhone is already synched with iTunes on my MacBook

Settings>General>Reset>Erase All Content & Settings, or plug it in, iTunes running & hit the "Restore" button on the Summary Pane. Either method will return the phone to a state just like it was when first taken out of the box, with all of your data & settings erased. Do not sync after restoring in iTunes.
