Last year I downloaded the Nook app and was able to purchase and read books on my ipod. I recently purchased an ebook and iTunes said that I needed to download ibook. I have not been able to find an ios app that will allow me to download ibooks. Can I circumvent this and just use the Nook app that worked so beautifully just last year? Update says that I have the most current ios app.

The iBooks app is compatible with the 2G iPod if yu update the iPod to 4.2.1. iOS 4.2.1 is the last update for the 2G iPod. You need iTunes 10.x to do the update. If you have a Mac, that require OSX 10.5.8 or later.
It says I need a higher OS..Ibook doesnt work with ipod touch 2. I really wish they just let things work with the older version as well
Subsequent to my first reeply Apple updated the app and the upodate is not compatible with iOS 4.2.1.
Your only way is if you have the version that was compatible on your computer such as in the recycle bin/trash or in a computer file backup. In that case delete the current version that is in your iTunes App library and replace it with the older version. Then sync.
I accidentaly deleted iBooks on my itouch 2G a few months ago and lost a lot of books in that way.
I got it back by downlaoding the latest version of iTunes, there you have a list of previosuly downlaod apps on your itouch. Sync your itouch first. When that is done, go to the list again, there is an option to install the app(in this case iBooks)and it downlaoded within 20 seconds!
I got all my books back and I am very happy

You can only redownload the current version of apps that are available from the App store. The current version of iBooks requires iOS 5 or above.
