I cannot disable the Correct Spelling Automatically feature. Rather, I can, but once I close and reopen the application it will be reenabled. I first noticed the issue when I upgraded from Trillian 1.2.20 to 1.2.40, but I just tested this in TextEdit and the issue exists there as well.

Have you turned the global off in System Preferences > Language & Text > Text ?
Sorry, I don't know what you're referring to. The only options I have in System Preferences > Language & Text > Text are automatic character substitutions, which language to check spelling for, how quotes should be formatted, and something called "Word Break".
Apologies. I've been in Lion for so long I forgot that Snow Leopard has some differences in its available settings, and that was one of them.
Edit menu in one program that supports auto correction. Switch it off there. I THINK that this switches it off globally. Not sure, give it a try.
But this is the problem I'm having. When I disable auto correction, it turns itself back on.
I don't know of a way to disable just the auto-correction. It's possible to disable spellcheck completely for all Apple apps, but some third-party apps stubbornly provide their own spellcheck database and aren't affected by the system facility being missing. (Word is one).
Yes, Word has a particularly frustrating auto-correction feature that extends beyond just spelling (like auto-formatting). But I actually like how OS X highlights words it thinks are spelled incorrectly, I just don't like how its auto-correct makes it nearly impossible for me to type certain words and names.

There are two settings for it.
One is in Edit > Spelling and Grammar. The other in TextEdit > Preferences > Options.
If you turn off the former and quit, it will be re-enabled when you open TextEdit again.
If you turn off the latter and quit, both should be disabled when you open TextEdit again.

Yes, that is exactly the behaviour I see. Thank you for pointing that out, I wasn't aware of the latter option. However, the issue persists in other applications.

Although some people say this is a global setting, that has not been my experience. AFAICT, it's a per-application setting (eg, turning it off in TextEdit does not affect Bean). If it works as expected in TextEdit, then the Cocoa spell checker is functioning normally. You have to change the setting in the application you're using.
