It's seems strange that there hasn't been an update available for my 2010 Mac Mini through Software Update. There were updates for my 2009 MBP.

I have a 2001 Powerbook running Tiger that still gets daily use. I'm not expecting an update for it. Maybe it's so old it wouldn't need one. I have disabled Java in Safari in all 3 machines.

Like you said, I'm not going to manually install anything.

What system is the Mac Mini running? If it has Lion (Mac OS X 10.7), and you haven't manually installed Java on it, then it doesn't have Java and there's nothing to update, and you're safe from these recent variants of Flashback.

As to the old Tiger machine, that one is and will always be vulnerable, since it has an old version of Java and Apple doesn't release security updates for Tiger anymore. Turning off Java is the only option for keeping that machine safe.

The Mini has 10.7.3 on it. I looked around for anything "Java" on it. I found Java VisualVM in usr/share/java/Tools. Also Java Preferences in Utilities.

When I try to open either one it says "To open you need a Java runtime. Would you like to install one now?"

Kaspersky's flashbackcheck.com page says I have a vulnerable version of Java and should run Software Update. It also says I'm not infected.

Software Update still has nothing for me.

That's amusing, because it's not true. Your test trying to open Java Preferences indicates that you don't have Java installed at all, so you definitely are not vulnerable. Just goes to show you how much to trust pages like that. And Software Update won't list any Java updates, since you don't have Java to update.
