I just registered my podcast with iTunes. However, under the title of my podcast it says "By Unknow". How do I change this to put my name/company name?

This information is carried in the 'itunes:author' tag in the feed; as presumably you aren't handwriting the feed but are using a program or online service to make your podcast you will need to find somewhere in it where you can enter this information.
I am using Libsyn. I have gone through the settings for my epsidoe and my account and my name is there. Have you used Libsyn before, do you know how to change the author tag?
I can't advise on Libsyn, though one of its employees posts here occasionally and you might catch him if you're lucky: but they presumably have some sort of Support and you could ask there.
