For eject, go to System/Library/Core Services/Menu Extras and double click the "eject.menu".

Now, in the resulting Eject icon in the right of your menu bar, click to get options to eject either drive.

I am unclear on one part - will this program the eject button on the keyboard to eject the sata optical drive?

That has nothing to do with the keyboard.

Pressing Option and Eject on the keyboard should open any secondary drive.

I'm new to this and wondered if you could clarify how the optical drive gets its power.

Is it through the new SATA cable which connects the new optical drive to the SATA port on the motherboard, or through the existing cable which splits and currently supplies the existing Superdrive?

You'll need one of these:

The narrow SATA cable ONLY carries data. This WIDE SATA cable is needed for power.

Yes, that looks just like what you need, except.... there is little clearance space above the SATA data connector on the motherboard behind the fans. You MIGHT need a right-angled SATA data plug on one end of your cable??

You can also buy optical drives with PATA to SATA adapters (including the power adapter).

It's a lot easier than getting to the SATA ports on the motherboard of the early Mac Pro. You have to move the front cooling fan, which is complicated of the 1.1
