You just have to search the App store. As you probably found out, there is no category of apps for the 1G iPod.
You might try a Google search.
You check the requirements for each App in the Store. They are listed under Requirements.
Skype, for example requires iOS 4 or later. So you cannot put Skype on a Touch with iOS 3 and if you have a 1st generation Touch, that can only install iOS 3.1.3 as the latest version.
There's no way (that I know of) in the iTunes Store to browse Apps by iOS requirement. Try external web sites, such as Appshopper.com and search for iOS 3. My search came up with 1000 results in All Categories.
