I have Time Capsule v7.6.1 and nowhere can I find the screens suggested in the article (HT1281:Time Capsule) regarding archiving Time Machine.

You need to download 5.6 utility from Apple for Lion.. as the included 6.0 is toy version.

Remember to start 5.6 and not 6.0 when you want to work on the TC.
Download, install and use the full featured AirPort Utility 5.6 for Mac OS X Lion
Keep both AirPort Utility 6.0 and 5.6 on your Mac and use the one that you want or need.
