How can I change the default city in my calendar?

I am not quite sure what you are asking, but there's this:

Your location for time purposes is set in System Preferences, Date & Time, Time Zone tab.

If you are using iCal, there is a Time Zone option in iCal Preferences, Advanced.

Then try to change the Time Zone in the Preferences Settings on your iPhone, in the "Calendars" section of the "Mail, Contacts, Calendars" Brick. In the "Time Zone Support" turn "Time Zone Support" on, and set the Default Time Zone to the City of your choice.
