How can I change MMS settings on IOS 5.1?

Ther's no settings other than in Settings > Messages > MMS Messaging ON/OFF.
Your plan/carrier have to support it.

That is a real pain. I'm on a network thjat doesn't currently support it, but I have the settings to manually input. Apple - Let us chenge these sort of settings, please!!
You can't, it's the carrier. You've to change your carrier (assuming you got an unlocked iPhone).
But you can use iMessage for pictures/video messaging provided your recipient have iMessage as well and configured.

I have an iPhone 4S with 5.1.1 unlocked with Gevey and I had a similar issue. I could send MMS only to other iPhones but not any other smartphones. I found an option that worked. Some Australian guy posted this:

and I found that it worked. My setting info was different of course because I am in Canada with Koodo, but when entered all the info I could it worked. I can now send MMS messages.
