I found this elsewhere on the support site--do a spotlight search for image capture on your computer. Open it and you can set it to open which application when you connect the ipad. I just reset mine to open iTunes. It seems like the default is iPhoto, because certain (perhaps many) apps create new images and they're stored on your ipad until you sync. Example - my daughter has an app that allows you to put big crazy hairdos on existing photos I've exported to my iPad.
