How to make iTunes NOT sync RAW images?

I take a lot of pictures with my Canon DSLR and have it set to save as both RAW and JPEG. I typically copy them to a folder in my "My Pictures" folder.

I've recently been syncing my iPad (and iPhone 4S) with iTunes to show these pictures to my friends, and when I choose a folder to sync with my device, it syncs all pictures. This means that I essentialyl have two copies of each picture on my iDevice, one from the RAW and one from the JPEG.

Is there any way to tell iTunes to ignore or not sync the RAW images, to avoid the time and space of duplication?

As far as I know, there is no way to tell iTunes to sync only certain file types within a specific folder. However, in your case, the solution is simple but will require a little more work on your part.

After you've copied your photos (both RAW and JPG) from your memory card into the folder in your My Pictures folder, sort them by type. It should show the JPGs at the top in a list, followed by the RAW images. Cut or copy the JPGs into a new folder (call it JPG Images). Lastly, tell iTunes to sync with the JPG Images folder, and you should transfer only the JPGs to your devices.

If you want to get fancy, you can segregate groups of photos into sub-folders within the JPG Images folder. This will sort your photos into Albums in the iPad and iPhone. I do this, and it's great for showing off Photos. For example, I call my sync folder "iOS Device Photos". Within that folder, I have subfolders that are called "Arizona Vacation 2011" or "Disneyland 2010", all containing JPGs. On my iPad, each of those folders shows up as an album called "Arizona Vacation 2011" and "Disneyland 2010". Nice and neat.
