I haven't been able to sync my Classic properly and I have uninstalled iTunes and reinstalled it and am now resetting my Classic back to factory settings.
This has now been restoring for the past 10 hours. Is this normal? How long should it normally take?

No it would take at most 2 hour, I think your iPod hardisk is dying causing the delay and iTunes freeze.
Do a check on the iPod Hardisk using Disk Diagnostic as posted earlier by tt2
