I've changed my email address and now my iPhone will not sync with iCloud. It remembers my old email and does not give me the option to type in my new address. It's grayed out. I've deleted the old account from my iPhone and everywhere else I can find.

Go to https://appleid.apple.com/ and log in to your AppleID (under the manage section) a with the OLD email address. Now, change the primary email address to your new email address and verify it. You have now altered your AppleID to use the new email address as the primary ID, but the internal account associated with that AppleID is exactly the same.
Now, on your phone, simply delete the iCloud account, and add it back with the new AppleID - since the AppleID is still linked to the same account, you are merely recreating the same iCloud account but with the new updated credentials.
