I read that I can make a playlist & maually download that, but what if I am downloading numerous (many) whole CDs?

Why would your current content be wipe out if you sync it again with iTunes? Is this a different PC/iTunes library from the one you originally set it up and synced with?

same PC, only the original music was deleted, replaced with other music.
Your iPod is designed to mirror your iTunes library. So if you remove content that was originally stored in your iTunes library, it will be removed from the iPod as well the next time you sync it.
If you want to avoid this from happening, you'll want to set up the device for manual management.
