I have imported a piece of audio which is a simple recording of someone speaking, there is a bit of background noise which I would like to remove or clean up in garageband. Please can somone help? Thanks.

GB is the wrong tool, you should use an audio editor like Audacity.

I have downloaded audacity now and have found a tutorial for noise removal, which is helping in parts but it is sometimes making the speaking audio sounding a bit weird. Do you know how I get round this? There are options to adjust the "Noise reduction (dB)" and Sensitivity (dB) but I am not sure what these do. Thanks.
