I'm trying to set up iCloud on a laptop. However, I have a corporate default profile. iCloud *always* tries to install into this profile. (Except that the VPN blocks me when I use this profile)
How do I set up iCloud to use a different profile when installing? Ideally I'd like to have an iCloud profile and my corporate default profile.

Create a new profile (call it iCloud), no email, start Outlook in the new profile and install iCloud. Set Outlook to ask which profile to use when started.
Doesn't work. When you try to set up mail, it prompts me to close outlook. When I do, it installs the mail setup into the wrong profile.
You might find it worthwhile to read Outlooks documentation, it helps.
Here is how to do it
1 Exit Outlook
2 Go to Control Panel>Mail
3 Select profiles
4 Add new profile> install iCloud Mail in it
5 Set it as the default profile or choose Ask at start
6 Start Outlook
I did exactly that.
When you say "install iCloud mail in it", I do it by clicking "mail" in the iCloud control panel. This requires you to close Outlook.
Are you suggesting manually setting up the mail as opposed to going through the control panel?

I never mentioned iCloud control panel, I mean the Mail Panel in Windows Control Panel, make a new profile, make it the default, Outlook must not be running while you do this.
You can install iCloud into the profile before or after you create it and set as the default.
PS: Is this machine a Windows Domain Member?

Once you have iCloud working you can set either profile as the default.
