I would like to use the data I've entered in iCal as text in another program. Can the birthdates, anniversaries, and person's names throughout iCal be converted to text?

If you can find the event by entering a search string in the search field, then yes: (I can only confirm this for iCal in MacOS 10.6.8 and 10.7.3)
Then create a new text document in Textedit and paste the calendar events to that document. You now have a texttual list of all your events.
But for repeating events you only will get one entry.
