Itunes with my own media setup

I do not want itunes to edit or fix any of my music on my computer (ie tags, album artwork, etc)

What is the best method for setting this up in itunes?

When it comes to my "Library/Music" in itunes, how do I set this up so it doesn't list or access my main mp3 folder? I want to manually add songs to this library (with the sole intent of sending to itunes match, for my devices to use) I do not want all my songs on my computer listed in the library in itunes.
