we are having an issue with Exchange 2003/2007 and outlook 2007/2010 where emails that are replied to from an iPhone (4s, running latest 5.1) that show up in the users inbox in a very light yellow text that makes it impossible to read...
It is not 100% of the time and i can't find whats causing this to happen, other than i can confirm it only happens on replied emails from iPhones...

I too, am experiencing this issue, except I'm using a 3GS with OS 5.1. New emails have the proper text color but if I reply to an email sent from Outlook 2010 the reply is a faint color of yellow, almost illegible.
I am starting to see this in our enterprise enviroment as well. Has anyone found information on this, it is killing my support for execs with new iPhone 4Ss.
Okay, so I found a work around. What ever version of Outlook you have 03,07,10, you need to go and change the way that all incoming mail is viewed to Plain Text. This change is very easy and you can look up how to do it if you are not familier. Outlook 2007: Tools>Trust Center>Email Security>Check - Read all standard mail in plain text also check read all digitally signed mail in plain text. Close Outlook, re-launch and check the messages in question.
