I'm trying to correct a problem with my wife's iCloud email account. I cannot change the 'Incoming Mail Server' name in the 'Account Information panel. If I delete the account and start a new one, I can enter the correct name ... "imap.mail.me.com". However, once I click on create, the Incoming Mail Server name reverts to 'mail.example.com.
Anyone have any suggestions on this problem?

I had this problem too, so I called Apple.
The problem seems to be iCloud related.
The cure was to quit out of Mail,
Open System Preferences,
Open iCloud Preferences,
Attempt to sign in to iCloud,
If that fails, choose sign out,
You should finally get to the iCloud Peferences page and probably see that "Mail and Notes" is unchecked.
Check it,
Exit Preferences.
Open Mail
If yours behaves like mine, Mail should now be working.

perfect. However, I did not need to re-check "Mail and Notes".
Worked for me - I closed mail, opened system pref. I was already logged in to icloud so I unticked and re-ticked mail and notes. Thank you
