I have a Mac, 2 iPhones and 2 iPads for me and my husband and an iPod for my son. I only have one iTunes account and I manage everyone's device from my Mac. Will iCloud work for me and not sync the same thing to each person's device?

Yes. iTuness can handle syncing multiple devices without a problem....when you click on each device in the iTunes sidebar, you can specify what you want to sync to each device....
Why don't you use separate iCloud account for each person (this is what most users do). You can still use the one Apple ID on iTunes to share music, etc.
You say you manage everyone's devices from your Mac. If this is from iTunes, then why do you want iCloud (which for the most part does syncing independent of iTunes - in fact you never want to sync a data set from both iTunes AND iCloud.
