I am cancelling my mobile me account and want to delete my me.com from my iTunes account - I would like to replace it with my gmail account..can this be done? If not, to what email address will my iTunes receipts go to? Thanks

I must be missing something because this does not let me delete my me.com email address as the primary email address? There is no option for this?
Sorry, you cannot change a me address as a primary address, so I assumed that you wanted to change it as an alternate address. If you wish to use a Gmail address for an iCloud account, you will need to start a new account. If you change your account for iTunes you will no longer be able to access your purchased content from the devices on which you change it.
So when I cancel my mobile me account, I will not longer be able to retain the iTunes previously purchased?
You can't cancel an Apple ID, you can only stop using it, if you stop using it then yes you won't be able to use your purchases.
