Since, switching to Lion O.S. I lost my "Application" folder in the "Finder."
Where do I go to retrieve it?

Do you mean in the Finder's sidebar? Please provide more information.
This might help.
Click on the "Finder."
Go to "Preferences" pull down menu.
Make sure the box before "Applications" is checked.
My "Application folder" cannot be found.
