OP: Apple calls this the "Sorting Pop-up Menu". The User Manual provides information on this and other parts of the UI.

I have a similiar problem and cannot solve it. From a project containing 650 photos, I have created an album using 150 photos in the exact sequence I want to use making a book with another outside book maker. To use this book service, I must use their software called Photobook Designer. This requires that I import a folder from the desktop. Thus I need to move the 150 photo album from Aperture into the empty folder on the desktop. Grabbing and dropping from Aperture onto the desktop folder worked BUT not fully. The picture files are all in numerical sequence which is NOT the manual sequence I wanted or started out with in Aperture. I don't know out to LOCK the sequence in Aperture so that it transfers correctly into the desktop folder.
If you can help me with this I will be very grateful.

Images are processed in the order you select them.
Sort them manually as you want them.
Select the first Image, then "{shift+click}" the last Image. This selects them in the order from first to last.
Export using an Image Naming Preset that starts with a Name Element (see here and nearby in the User Manual) that assigns an ordinal number (e.g.: "Sequence Number", "Index Number", or "Counter"). This creates new files and names them in the order they were selected.
You should end up with all the files created by exporting Images named in an order that can be recreated any time by sorting by file name, ascending.
Note that dragging Images from Aperture to another program (including Finder) copies the Previews. If you want full-size files based on your Images, you must create them via "File ▹ Export ▹ Version" or equivalent.
