This weird, but today's software update deleted all but 2 of my screen resolution options in the display section of system preferences. The 2 remaining options are not ideal for my iMac. Does anyone know how I might restore the options that were lost?

Create a new user account and log into it, does the problem also exist for that user?
I think what you are seeing may be a problem introduced by apple latest update.
With one person reporting this, it could have been a problem with that user's system.
But with two other users posting in that thread about the same problem under the same circumstances (worked before update and doesn't after) and now you also having the same problem I now think it's the update that screwed things up somehow.
All I can suggest is revert to your backup of your system, i.e., the one you did before you upgraded your system and then wait for another apple update. You did do that backup didn't you? 😉
