Q: I cannot deleted my photostream photos from my iPhone?  Can this be done?

When you open the photo stream album in the sheet view (multiple photos) tap the rectangle with an arrow in it in the top right of the screen, this enables a delete button at the bottom of the screen, select the photos you want to delete and tap the delete button.

I'm confused.  If you are on 5.1.1, then you can delete photos from your Photostream folder. Just tap on the box with an arrow in the top right corner, and select which photos you want to delete.

Alternatively, if you want to remove the folder, just go to Settings>iCloud and switch off Photostream.

Then you are either looking in an album other than camera/photo stream, or your phone is not running the latest software.

Are you sure that you are running 5.1.1?

That doesn't sound like a photostream album to me.

Try switching Photostream off and then on again.  See what happens.

It might be called photostream, but is it your photostream album or is it an album/event you have named photostream that you have synced via iTunes. (check the photo tab when your phone is connected to iTunes).
