My time capsule is full. What do I do now? Can I erase backups form 3+ years ago to make room?

Are you storing any other data on the Time Capsule besides your Time Machine backups?

No. I am just backing up mine and my wife's computer.

Why would you erase your backups? TM is supposed to do automatic thinning. It will delete older backups as needed to make room for the new.
Don't tamper with it or you'll most likely end up corrupting everything and make a much bigger problem. (not that there currently is any problem).
