there is no need to change your APN settings, you just need to have an APN name from your service provider
APN user name and password will be blank, once you get the APN name just enter it in the APN name field
you can try to find the APN name for your CARRIER via GOOGLE as well

I don't know how to access the setting at all to even just change the name. I go into settings-general-network I can turn on or off, my cellular data but I can't change anything. It says VPN on there and I can make stuff there but it doesn't ask for the apn. How do I change the name?

once you click on the cellular data option , you should see APN settings on the right hand side

To create a APN do I choose L2TP,PPTP, or IPSec ? I have a Iphone3g s and straight talk sent me a list of the settings for me to enter.

Go to this site on your iPhone. Follow instructions to add ipcc settings file for Straight Talk. That's it!

I have straight talk and am using it with a iPhone 4 .
I was able to get my data working but can't send or recieve picture messages. Does anyone know how to correct this? I used the http://www.unlockit.co.nz/ to change the APN and that allowed my data to start working.

Having the same exact issue! I am using iOS 6 beta 3 with an unlocked iPhone 4S. I have been using T-mobile and their carrier settings allow me to adjust apn manually so everything works fine. When I use the Straight Talk SIM, it changes to the AT&T carrier settings 12.3 and turns off the APN configuration page. I used the iPhone config utitility on my mac to install a custom profile which gave me the interet, but stil no MMS. Sigh... I guess with an MVNO it will always do this sort of thing?

Did you find a fix for this? I am having the same issue.

I did not find a fix. I have given up!
Switching back to T-Mobile as soon as their 1900 MHz refarming comes to my area (Oahu, Hawaii). StraightTalk is great in theory, but I have been having connection issues. For whatever reason, I seem to be losing connection to the their servers and have to turn on/off airport mode to reestablish a connection. I would rather pay T-Mobile and get fast HSDPA+ then muck around with an MVNO.

I have an unlocked iPhone 4S with iOS 5.1.1 and I use the following post from Howard Forums:
[In the furture, the link should become back to howardforums.com, I hope]
I also use the order and the modified MMS setting from reply #7:
-Change MMS setting
-tick 1 file and Restore
-install APN profile
-Change preference.plist (there are two places for APN settings)
-Tick that two files and Restore
It works for me and thanks to all the contributors from Howard Forums.
I know there is a jailbreak method and it might be easier for some, but I don't want to "break" my phone.
Good luck to everyone too.

Where are the two places for APN settings? I tried to use this forum already and it didnt work and everything stuck when I restored and tested it. I have an iPhone 4 with iOS 6

With iOS 6, changing plist doesn't seem to work anymore. After updating to iOS 6, it broke my MMS setting on iOS 5. But the SIM swap method continues to work on iOS 6 and that is what I did. For reference:
