Somehow my three year old managed to delete the Apps store icon.
How can I find and replace the icon in the doc?
Is it possible to lock the folders and icons on my ipod so that he doesn't delete them?

Settings, General, Reset (scroll down) Reset Home Screen Layout.

you can find it by using search the thingy that show when you slide to left of the first today screen
or you can try to restart

You cannot lock apps. You can restrict the deletion and installation of apps in restrictions. Settings>General>Restrictions - take at look at the options.
If you have restrictions enabled, maybe that is why the app store icon is not appearing.
Swipe from screen to screen to look for it as well.
