how do i transfer music from computer to iphone

I have converted all my music to itunes but I can't seem to sync my phone under itunes?

I successfully synch, and the music is transferred to my iphone 4, but as soon as I leave my network area the music disappears from my iphone. Do I have to synch the music separately/differently? In order to keep the music permanently on my iphone do I need to sign up for iMatch??
