Open System Preferences, click "Print and Scan" and press the + button. If you see your printer, click it. In OS X Lion, you can install HP printers drivers in this menu. If this doesn't work, your printer isn't supported by Lion

This Apple KB article shows that the printer and scanner driver for your 7310 is available from Apple Software Update. With this being the case, when you added the device to the Lion Mac, two entries may have been created in Print & Scan. This can be shown as two separate entries, one appearing under the heading of Printers and the other under the Scanners heading. Or, for the single entry there may be two tabs - Print / Scan. If you do have this Scan tab or a scanners entry for the 7310 then the driver has been installed. So the next thing to try is open Image Capture and see if it will let you perform an overview of a document loaded on the 7310. If Image Capture fails to scan and shows an error, then can you reply with what this error message says.
