This is weird: Some minutes ago, Airplay worked – now it's gone. On all devices (tv 1 > Mac / iPhone / iPad).
On the Mac, the beamer isn't recognized as external display any more,
on the mobile devices, the Airplay icon is gone.
I have already reset my tv, no difference.

A little confused by the question, the Apple TV 1 doesn't support AirPlay.
Sorry: I suppose I have the 2nd gen tv. The black one that came out about 2 or 1.5 years ago. The one before the 2012 model.
I'm also not sure about the projector connected to the Mac, but so far as your network issues, have you tried restarting the router or checking for interference.
Airplay does not work (mostly)
