Sign out in System Preferences>iCloud on your Mac, or Settings>iCloud on your iOS device. You can't actually delete the account, which will remain in existence online, but you could delete any data you don't want stored on in and just ignore it.
If I agreed to joining iCloud when setting up my Mac, but I never actually set up an account (ignored the email I was sent to do this), then I'm assuming that none of my data has been pushed from my machine. Is that a correct assumption?

In order to sync any data to iCloud you would have had to sign in in System Preferences>iCloud with your Apple ID (having created one if necessary) and checked the data types you wanted to sync there. So, your not having done that, either you don't have an iCloud account or it you do it's empty.
Maybe there is a wish to shift existing stuff like purchases to a new icloud id. How to do when there is no way to do it within manage my id. In order to change the primary adress it must be allready there to verify it. Every new apple mail adress becomes an id also. At the end zhere is no way to shift or move to the new mail adress due to the fact that it is already an id.
How would you do this?
You cannot move purchases from one Apple ID to another; and you cannot change the primary @me.com or @icloud.com on an iCloud account.
Signing Out of iCloud leaves one with no calendars or events in Calendar. You are prompted to save Contacts, but not any other sync items. How do you save a copy of the calendars and other items?

To move emails, create a new mailbox in Mail nuder 'On My Mac' and drag messages from the iCloud mailbox to it - don't try to do too many at once. Start with 100-odd.
