Which means he'll ask... "Why?" And then I'll say ... "Because I'm going to give you a gift," which kind of ruins the surprise. )-:

That's not possible.
Get the gift card and enclose a note with it indicating which app(s) you are paying for. Otherwise, buy something else.

Asking him for his email address, if you do not already know it, is unlikely to raise any suspicions as to a gift app. You can ' bluff' him anyhow by sending him an email about something!
