What do you mean, "turn off iTunes"? If iTunes is currently displayed on the screen, press the home key and iTunes goes away. If you have music going without iTunes displayed, you can double click the home key, tap and hold the iTunes icon, click on the "x", and that shuts it down.

Like any app on your phone. double click the home button. tab and hold the app icon then the X.

or if you use your headphones that came with it, click once on your control bar to stop music

You can restrict it: Settings>General>Restrictions>Enable Restrictions>iTunes>Off.

It is not possible to delete the iTunes app from your iPhone. The only thing you can do is to switch iTunes off in the Restrictions Settings, so the application icon is no longer visible on your homescreen.

Go to Settings > General > Restrictions > Turn OFF iTunes
