I got one question on how to remove your book in certain stores in iTunes Connect:
manage books > selected my book > edit rights > select store and edit "cleared for sale" to NO
This worked great for me, but now the status of my book is: On x Stores and Not on x Stores.
Is there a way to remove the store completely, so that the status is only: On x Stores?
If you took it off sale in all territories, it's out of the store.
Give the backend time to migrate that info across all servers and then search to confirm.

Is there a way that the status of the book contains ony the stores, where the book is available? So that there is no red button with "Not On 1 Store"?
What's the problem with the red dot...seems helpful.
But to answer the queston, you've seen the tools and interface at work - that's it...no way to customize that I'm aware of.
As always, feel free to use the 'Provide iBooks Author Feedback' menu item for features you'd like added in the future, etc.

Like you wold do for a folder or file on your desktop, or an email in your inbox… A normal behaviour.
A link that would say "Delete this book" and would work as this label would let you expect.
