How do I stop out dated email addresses from popping up from my Contacts address book when I compose new emails?

Are those outdated email address still listed in your contacts? If so, it may be wise to remove those addresses.
Agreed, remove them from your contact list. (Open contacts)
That was done long ago. Nothing is currently in my Contacts book and they still appear when I start an email with their new address.
Where are you sending the emails from? Mail? A website such as hotmail/gmail/etc?
Have you checked whether you have contacts set to sync under your mail account preferences? (Mail, Contacts Calendar > Click the Account, turn off Contacts).
I'm using the newest iPad and Gmail
If you're using Gmail from the web (ie: Safari or the Gmail Apps) it pulls from your gmail contact list; if you're on mobile gmail, the right hand side of your browser when viewing mail will have a contact/address book icon (delete the contacts).
Alternatively, if you're on desktop version of gmail when viewing mail, you're see it says Mail > click that and change to contacts.
You can also go to the settings to not automatically add a contact (click the gear / then mail settings / Create contacts for auto-complete: change to I'll do this myself).
As far as I know you cannot clear out the cache of previous email addresses.
With time though, they will be flushed out.

I think you are right. It's a shame. Apple should have done something to fix it. I typed one of my most used email addresses wrong once, and it just keeps on popping out when I type the first letters. FRUSTRATING!! APPLE DO SOMETHING!
Matthew is correct. You can't delete them but eventually they will drop out over time.

You can remove them - you can do it for both email and messages. Open the icon to start a new message - enter a letter relevant to the email you want to remove from history. It will provide a list of email addresses that match with an icon alongside - i in a circle - information icon - touch the icon and you are given the ability to remove that email from recents.
I have done it and it works!
