Whenever I have a number in Notes and I touch it, it automatically dials the number as if it's a phone number.
How do I turn this off?

Hi, does anybody have an answer to this - I still find it irritating!
Any number on my device is treated like a phone number and, if I press it to copy it for instance, it starts dialling the number from my phone.

If your intent is to copy the number, don't press it ... instead, slide your finger over the region with the number in it. I find it best to slide from right to left.
Don't think you can..... there are other discussions of this in the forums if you do a search. I have done the same as you, I know make an effort when working with a phone number NOT to touch it

My issue arises when I try to type text next to the "number" - usually when in Notes. Its very frustrating, as I try t type text and the phone starts dialling.
Ive found its simpe enough to copy the number without dialling it - by keeping your finger on it - but I'm still finding it impossible to text next to the "number".
How do I turn off automatic dialling of numbers?
