My laptop restored and i still have all the data/music on my ipod , is their anyway to get everything from my ipod onto my itunes again?

The sync is one way - computer to ipod. The exception is itunes purchases: File>Transfer Purchases

It has always been very basic to always maintain a backup copy of your computer. Use your backup copy to put everything back.
