when synching iPhone to iTunes [as usual], message received that new software ready to be downloaded - agreed to that - then iPhone froze with image of cable attaching to iTunes on screen - can't turn iPhone off, can't reset using iTunes - any assistance gratefully received

You should try putting it in DFU Mode (hold both Home and Sleep/Wake buttons and then let go of the Sleep/Wake button after 5-7 seconds) which it should already be in, or keep holding the Home and Sleep/Wake button until you seen a flicker and black screen. The phone will reset and reboot.
