I'm editing some video clips that were recorded in only one channel. Is there a way to create two-channel audio in iMovie? I don't want the soundtrack to come out of only one speaker.

There is a way to do this in iMovie.
Use SHARE/EXPORT USING QUICKTIME. This will give you a great deal of control.
Here is an example that you can tailor to your needs.
SHARE/EXPORT USING QUICKTIME
EXPORT:Movie to QuickTime Movie
Click Options:
For Video Settings: choose Compression Type: h.264
For Sound Settings: choose AAC, 48000 hz, Channels:MONO
A mono recording should play the same audio on both speakers.

I want the audio to come out of BOTH left and right channels. How can I make this happen?

This free app can convert your one channel "stereo" into mono.
Open the file and choose the "Tracks"menu and choose "Stereo Track to Mono".
