Can I temporarily turn off iCloud backups. From time to time I'm limited to dialup internet service. iCloud's taking over the connection, preventing simple eMail exchanges.

When you switch to iTunes backups, the device will start to make any further backups to iTunes on your computer. It will only do this when it is connected to iTunes and a power source. (If it is set to sync/backup wirelessly, it will only do so when it is connected to a Wi-Fi network)

When you switch back to iCloud backups, it will basically resume where it left off and start to back up once again to iCloud. There is no moving of backup files between iTunes and the cloud when you switch between backup options.
