If you mean from your purchase hostory so that you can re-download them, then from here :

    1. Depending on the content type, open the App Store, iBooks, or iTunes Store on your device.
    2. Scroll to the bottom of the main page.
    3. If you're not already signed in, tap Sign In.
    4. Tap your Apple ID name, then tap View Account.
    5. Scroll down on the Account pane, and tap Hidden Purchases.
    6. Locate the item you would like to unhide then tap the Unhide button.

If you mean on the iPad's homescreens then are they hidden by an app age rating (Settings > General > Restrictions > Apps), or that you have more than 11 screens of apps and some are only accessible via the spotlight search screen ? If 11 pages then you should should be able to re-arrange them when connected to your computer via the iPad's Apps tab on the right-hand side of your computer's iTunes - you should be able to use the mini-screens on that tab to move apps from later screens to earlier screens and app folders.
