How do I synchronize my notes without getting my wife's email?

My wife has the dot-mac account and her name is on the iCloud account. This works well for contacts and iCal. But when I try to synchronize my notes, her e-mail account is enabled on my computer.

I had some notes on her computer, with information I needed on my iPhone. But she saw them, didn't know what they were for, and deleted them. I don't want to depend upon her not deleting them from her computer - but I also don't want all of her e-mail copied on my Mac.

Ideally you should each have your own iCloud account, that way you can keep your own mail, contacts, calendars etc and avoid any unintended deletions. If there is any information you wish to share you could always log into her account as a secondary account (system preferences > mail, contacts & calendars) and enable only the services you wish to share (I.e. contacts and calendars, as you specifically mention these).

My "other" solution was enabling notes on my computer. But it also enabled her mail, which isn't acceptable. But I can do it to copy my notes to hers, then disable it.

So I have to live with trying to persuade her to not delete notes. I could get my own iCloud account, but if that means we have to stop sharing calendars, that won't work.

You wouldn't need to stop sharing calendars, indeed there will be three different ways you could share calendars. You could use to share calendar function from iCal, you could each log into each others account as a secondary account or finally you could create a third account that you both use as a secondary account for shared items such as calendars.
