Photo sync is one way - computer to iphone/ipad/ipod.

Photos can be synced with one and only one computer at a time. Sycning to another will erase the current photos.

Copy your photos from your old computer, or your backup copy of your old comtuer, to your new one.

The iphone/ipad/ipod is not a storage device. It simply mirrors the selected content of your computer.

To remove pictures synced via iTunes is very simple.

If you simply want to remove one or two pictures, delete them from the folder that iTunes syncs to the iDevice.

If you want to remove the entire folder, connect the device to the comptuer.

Select the device from the left pane in iTunes.

In the right pane select Photos (or Pictures, I forget how it's worded) and uncheck the option to sync Photos.

This is the same way the pictures were placed on the device to begin with.
